Get ready, it’s time to make this delicious Hawaiian grilled Huli Huli chicken!

To begin making this make sure you have ample time to put it together as you will need to do the first two steps at least 8 hours before you need to cook the chicken on the grill giving it plenty of time to absorb all of the fantastic flavors of the marinade.

To make the marinade, take a small bowl and add in the pineapple juice, brown sugar, ketchup, soy sauce, ground ginger, and minced garlic. Mix it all together until everything is well combined.

Then, take a large ziplock bag and pour the marinade in it.

Next, add in the chicken and close the bag trying to get rid of most of the air from the bag. Move the chicken around in the bag to get everything covered in the marinade.

Now place the bag of chicken in the fridge and let it marinate for at least 8 hours or even overnight.

Once the time has passed, remove the chicken from the bag and discard the rest of the marinade.

Then using a preheated grill, grill the chicken over medium-high heat for 6-8 minutes on each side or until the internal temperature of the chicken is over 165 degrees at the thickest part of the chicken.

Once the chicken is done, remove it from the grill and serve it immediately!

Ingredients

  • ½ cup pineapple juice
  • ½ cup brown sugar
  • cup ketchup
  • cup low sodium soy sauce
  • ¼ teaspoon ground ginger
  • 2 teaspoons minced garlic
  • 6 boneless, skinless chicken breasts

Instructions

  • In a mixing bowl, whisk together pineapple juice, brown sugar, ketchup, soy sauce, ginger and garlic.

  • Pour marinade into a large resealable plastic bag and add chicken.

  • Seal bag and place in the fridge for at least 4 hours (or overnight).

  • Remove bag from fridge, drain and discard marinade from chicken.

  • Grill chicken over medium-high heat for 6-8 minutes on each side or until internal temperature of chicken reaches 165 degrees F.

    We tried it and loved it! Every year we spend 2 weeks in Maui and for the first time in 17 years , we couldn’t go because of the pandemic. So we bought a commercial shave ice machine and made Hulu Hulu chicken and fried rice for July 4th! It’s not Maui but it sure tastes good! Thank you!!!

    You can cook this in the instant pot too. Cook for 12 minutes if fresh and 15 minutes if frozen. You can reduce sauce down at the end to thicken and pour over the chicken, or can make additional sauce to serve with the chicken. Whatever you prefer.

    This can be cooked in the air fryer. Use the air fry setting and at 360°(F) for 16-20 minutes, depending on size. Flip the chicken after 10 minutes. You want the internal temperature of the chicken to be 165°(F) when measured with an instant-read thermometer.
