Peach Cake Ingredients

My grandma has been making Peach Delight for nearly 20 years. It’s typically served as a last-minute dessert for a family party. But, it’s also served at graduations, birthday parties, summer holidays, and potluck parties. Our family enjoys it because it’s light, refreshing, and not too sweet for a summer dessert on a hot day.

I am not entirely sure where the recipe comes from (beyond grandma) but I have seen variations of this recipe over the years.

Cake Mix – I use store-bought yellow cake mix found in the baking aisle at the grocery store. My grandma has been making this light peach cake for nearly 2 decades so this is my quick go-to cake, too. Sometimes, I make a double layer cake mix crust with butter and you can find those instructions in the recipe notes.

Butter – What makes this cake rich-tasting is the butter. Typically, I use unsalted butter but feel free to use whatever you have on hand; even margarine. The butter should be cold. Cut it into cubes, much like making a pie. Then, use a pastry cutter, fork, or food processor to blend the dry ingredients fully into the butter until no more dry crumbs remain.

Peaches – Start by draining the liquid from the peaches. Then, lay them out on a baking sheet and blot the peaches dry with a kitchen towel. This will help to remove the liquid so that the cookie crust doesn’t get soggy.

Sour Cream – Sour cream cuts the sweetness of the cake crust while adding a layer of creamy coolness. Two egg yolks will help to hold the sweetened sour cream in place while adding richness to the topping.

Cinnamon – Generously sprinkle the Peach Delight topping with ground cinnamon. This warm spice adds flavor to the topping.

Cake Mix Desserts

Cake mix desserts are great for a variety of reasons. Using a store-bought cake mix is inexpensive. I can pick up a box for about $1.00 and that’s a great deal. I can then use the cake mix to make the following.

Cake – I’ll adapt a cake mix like this Peach Delight Cake and turn it into a cookie crust. All it needs is butter to get a shortbread consistency. Since it’s already sweetened, it doesn’t need more sugar. Try my Peach Cobbler Dump Cake, Strawberry Poke Cake, and Blueberry Lemon Poke Cake.

Making Peach Delight Cake is my favorite way to jazz up boxed cake mix. I use this yellow cake mix with butter to make a shortbread sugar cookie crust that’s used as the base of this cake. Next, canned peaches instantly fill the center of this cake while a creamy sweetened sour cream icing is spread on top.

This Peach Delight is a very easy cake recipe made with butter, yellow cake mix, canned peaches, sour cream, egg yolks, and cinnamon and it's the easiest cake this summer. A perfect casserole dessert cake with peaches and a creamy cool topping for summer parties and cookouts!

Ingredients

  • 15.25 oz. boxed yellow cake mix I use Betty Crocker Super Moist Cake Mix
  • 3/4 cup (1+1/2 sticks) unsalted butter cut into cubes
  • 73 oz. canned peaches { 2 (29oz.) cans + 1(15oz.) can } well-drained and patted dry
  • 16 oz. (1 pint) sour cream
  • 1/4 cup granulated sugar
  • 2 large egg yolks
  • ground cinnamon to garnish

Instructions

  • Preheat oven to 375 degrees F. Grease a 9×13-inch casserole dish.

    Drain peach juice well. Place peaches on a double layer of paper towel or kitchen cloth. Blot peaches dry.

    Pour cake mix in a bowl. Cut butter into cubes then add to cake mix like pie crust and blend until dough comes together and no dry cake mix remains. I used a food processor to blend the butter and cake mix.

    Evenly spread dough into bottom of prepared casserole dish. Push dough until even and flat.

    Evenly spread peaches on top.

    In a small bowl, whisk together 2 egg yolks, 1/4 cup granulated sugar, and 16 ounces sour cream.

    Spread topping over peaches. Sprinkle with cinnamon.

    Bake in oven 25-40 minutes. The cake is usually done at 25-30 minutes but ovens may vary.

    Allow Peach Delight Cake to cool then cut into 18 slices.

Notes

THICKER CRUST – This recipe can be adapted to make a double thick cookie cake mix crust bottom. Simply double the crust ingredients (cake mix, and butter). Bake about 40-45 minutes.
