This quick and easy appetizer is also incredibly elegant. Just wrap a ribbon of prosciutto around a wafer of Parmesan cheese nestled against a sliver of dried fig, and drizzle with olive or truffle oil.

Yield:20 rolls
- 10very thin slices prosciutto
- About ¼ pound Parmesan, sliced wafer thin
- 8 to 10dried figs, stemmed and cut into about 3 strips each
- Truffle or olive oil

Cut each piece of prosciutto in half the long way; on each piece, put a slice of Parmesan and a strip of fig. Roll up the long way, pressing so meat sticks to itself. Cover with plastic wrap if not serving right away.

Serve within 2 hours, drizzling truffle or olive oil on top just before serving.

Second time I made this I used fig marmalade, it was a much bigger hit than with dried figs.

Good recipe, and I would recommend the fresh figs too, but I found the parm to be too sharp and will probably switch out manchego next time.

Manchego is superb. A drizzle of balsamic glaze and a pinch of red pepper flakes is pretty good too.

I used dates instead of figs and instead of Parmesan, I used cheddar au porto because this is what I had and it was a pure delight.

Good also with quince paste (membrillo) instead of dried fig which I found a little dry. Fig jam is good too but it tends to weep if you make them any time in advance.

I've not cooked with figs. In the video, the figs used in the goat cheese recipe looked different from the figs in the parmesan, prosciutto recipe. Are they the same variety?

This one is dried. The goat cheese app uses fresh figs.

I just made this Thursday using slices of Asian pears with a sliver of parmigiana and prosciutto. Ten people ate 30+ pieces. Big hit and very easy. Be sure to use really good prosciutto.

Great stuff! Quick, easy. My concentration is such that managing "helpers" in the kitchen is hard. This recipe is excellent if you have unwanted helpers because they can handle it while you make more complicated things. I use half figs instead of thirds.
