Where oh where has Kula Mama gone???

Well… Kula Baby is now a big brother! We welcomed his little sister about 6 weeks ago. I’ve re-entered the world of frequent feedings, diapers changes, swaddling, and cat napping to salvage some semblance of sanity. I don’t think I’m faking the sanity part very well yet. She’s cute as a button though, so that makes up for lack of sleep on most days 🙂

Cooking has become a weekend luxury, at least for the moment. Last Sunday we had a rainy, rainy day here in California. So instead of visiting the farmer’s market and running errands all day, we found ourselves at home with an open calendar. My husband took over Kula Baby duty and I slipped little sister into the ergo and started cooking. These “cookies” are pretty tasty. In my mind they are as good as any protein bar out there (depending on the amount of chocolate chips you include–I went light on them). My son sometimes likes the seeds, and sometimes does not–so depending on his mood I either add them in our leave them out. The cookies taste great either way.

Protein Cookies (Gluten-free, Dairy-free)

Ingredients

  • 1/4cupcoconut oilunrefined, organic
  • 1/2cupmaple syrup
  • 2eggs
  • 1teaspoonvanilla extract
  • 1cupalmond butteror any nut butter you choose, sunflower seed butter will react with baking soda and turn the cookies green however
  • 2 1/2cupsgluten free oats
  • 1teaspoonbaking soda
  • 1/4cupchocolate chipsuse dairy-free if needed, you can also use dried fruit here instead
  • 1/4cupchia seedsor any seed or chopped nut (you can omit seeds if your kids don't like them)
  • 1/4cupsunflower seedsor any seed or chopped nut (you can omit seeds if your kids don't like them)

Instructions

  1. Preheat oven to 350 degrees.

  2. In a large bowl combine maple syrup and coconut oil until creamy. Add eggs, vanilla and baking soda. Mix well. Add almond butter and stir. Finally stir in the oats, seeds and chocolate chips. Place a spoonful of batter on a prepared baking sheet and bake for 10-12 minutes. Depending on size this recipe will yield 20-40 cookies (mine were pretty big and I ended up with 24).

    My kids LOVED these. Actually, between the protein cookies and the energy bites they were torn which was their favorite! WE LOVE THESE SNACK RECIPES! And, even better, I love that they are healthy snacks for my kids.

    This was one of three of your recipes I whipped up today! These were also a hit at my house. My husband came home and tried one and said, ooooh, these are good! Then the next line was, are they healthy? Usually after he realizes something is healthy he doesn’t eat anymore but there were at least 4 more cookies missing this evening 🙂

    Hi! These look AMAZING! I am vegan and I want to try them with some dried fruit, but you mentioned you used ground flaxseeds and water in place of the eggs. How much did you use? Thanks! 🙂

    How would sunflower butter work for this? Would it turn green? My kids are allergic to peanuts, tree nuts, & coconut. Thanks!

      I have used sunflower seed butter but it does react with the baking soda and turn it green. You can cut down on the amount of baking soda to reduce the chances of it turning green.

        Can I use more of the nut butter in place of the coconut oil? We are also allergic to it. If not more nut butter what alternative would you suggest.

          How about trying avocado oil? Or applesauce would probably work too.

    I used cashew butter and the flavor was great. Thank you for the recipe. But mine were much fluffier and cake-like than what is showing in your picture. I used a cookie scoop and they pretty much kept their dome shape with no melting. Any idea why or what adjustment I could make? Sometimes I like a chewer, thinner cookie.

      If you leave out the baking soda they will cook flatter!

    Fantastic cookies! I modified them a little bit; used honey instead of maple syrup, cashew butter, added flax seeds & pumpkin seeds. They are a hit! Thanks for the recipe, can’t wait to bake more.

    I tried these today The taste was perfect. But i had one problem…they ended up spreading out out a lot and sticking to the baking sheet. As I tried to peel them off they fell apart. What did I do wrong? Maybe to much maple syrup even though I followed the instructions.
