Vegan Key Lime Cheesecake is the perfect ending to any meal not only is it a no-bake dessert. In fact, it is also dairy-free. Subsequently, this sweet and tart dessert will have you craving 3rds and 4ths. By the way, the almond flour gives the crust a nice bit of texture while the powdered vanilla monk fruit sweetener gives it a nice hint of vanilla. Not to mention, that this dessert would be the perfect accompaniment to any springtime, St. Patrick’s Day, or Easter dinner, or anytime. Vegan Key LIme Cheesecake:
Once you have made the crust allow it to cool. Next, make the cheesecake portion and simply pour it onto the crust, and refrigerate. Indeed this is my version of a recipe that was given to me by my husband’s aunt which I have recreated to be dairy-free.
Since my children have a hard time with dairy and love key lime dessert, I wanted to be able to make it so they too could enjoy this sweet and tart spring and summer dessert.
In fact, every time I make Vegan Key Lime Cheesecake it disappears in no time flat with the request that I make another one. In all honesty, the thing that takes the longest to make is the sweetened condensed coconut milk. Therefore, I make the sweetened condensed coconut milk (which by the way is also refined sugar-free) a day or two before.
Cassava Flour Information and Monk Fruit Information are available to peruse if you have never heard of these products. Cassava Flour, Almond Flour, Monk Fruit Sweetener, Coconut oil, canned unsweetened coconut milk, maple sugar, and pure vanilla are indeed all found at Amazon.
Key Lime Juice VS Lime Juice:
What is key lime? Key Limes are very tiny and small (about 1 1/2 inches) but pack a sweeter punch. Indeed, they tend to have a more floral flavor. Not to mention, Key Limes tend to be lighter in color. Persian Limes are much larger and tend to be more acidic. Therefore it is worth the time to juice about 20 Key Limes. Or purchase Key Lime juice from the store. Of course, regular lime juice can be used it will have an effect on the flavor. Persian Limes are the larger variety of lime sold in stores.
Dairy-Free Key Lime Filling:
Needless to say, it will take a little time to make my sweetened condensed coconut milk it is worth it. In fact, the Condensed Milk can even be made a day or two in advance. Then simply pour it in on the day you make the Cheesecake. Above all, use Full-Fat unsweetened Coconut Milk. In the event, that powdered monkfruit can not be found simply use my recipe to turn Monk-Fruit into Powdered Monk-Fruit. In conclusion, I highly suggest Kite Hill Cream Cheese create a vegan and Diary-Free Cheesecake. However, if you are familiar with another brand that is tasty use that in its place. Vegan Key Lime Cheesecake
Crust Ingredients
- 1 1/2 cup almond flour
- 1/2 cup cassava flour
- 4 tbsp Powdered Vanilla monk fruit sweetener
- 3/4 cup melted coconut oil
First, preheat the oven to 350. Combine almond flour, cassava flour, and powdered monk fruit sweetener until thoroughly combined. Second, pour in melted coconut oil into the flour mixture and combine until it resembles coarse sand. Pour the coarse sand in the center of a 15 1/2 x 10 1/2 x 1 1/2 -inch pan and press down on the crumbs until it covers the bottom of the pan.
Place into the oven and bake for 12- 15 minutes. Allow it to cool for a minimum of 45 minutes. While the crust is cooling make the Cheesecake.
Key Lime Cheesecake Ingredients:
- 2 packages of Kite Hill Dairy-Free cream cheese (room temperature)
- 2 cups homemade sweetened condensed coconut milk
- 1/2 cup lime juice
- 1/4 cup maple sugar
- 1 tbsp powdered vanilla monk fruit sweetener
- 2 tsp pure vanilla
- 1 tsp lime zest
Directions:
First, in a large bowl add dairy-free cream cheese, sweetened condensed coconut milk, maple sugar, powdered vanilla monk fruit sweetener, and vanilla. Mix until well blended. Finally, blend in Lime Juice until combined.
Pour onto the crust. Finally, sprinkle with lime zest. and refrigerate for at least 4 hours.
*Optional: Top with a piece of lime and more lime zest if desired.

Next, blend in the key lime juice.
1/2 cup key lime juice
Mix until well blended.
Pour onto the crust.
Finally, sprinkle with lime zest. and refrigerate for at least 4 hours.
